If you are having trouble leveling up your Knight (you have the item in your inventory but cannot apply it to your knight) Your Knights Hall might not be high enough. As to get your knight to the highest level before Saint there are several items that are needed, some can be found in campaign chapters and in the Round Tower for grail fragments.
